Since 1879, this soy sauce shop have been in business in Kyoto. They continue making the premium quality soy sauce by tradirional methods still using wooden barrels, caldorons and firewood. The method has been passed down from generation to generation by word of mouth. Their light color soy sauce is useful for traditional Japanese meals which is pleasing to the eye, as well as to the palate. The old building is also preserved because it’s very important for the taste of soy sauce that nonocular aspergillus oryzae has lived in wooden rooms. It would be interesting to visit a specialty store.
